Hope you had a good weekend, mine was pretty good and productive. Finally got some repairs done on my car, then got it washed and cleaned inside. Went to a dinner party with some friends Saturday night. Sunday I relaxed and made steel-cut oats and brown rice in the slow-cooker to see if that would help with meal planning.
Mr. Spice admitted that he actually likes to eat breakfast but never gets time so we’re going to try to make an effort to eat together before work.
Breakfast: Steel-cut oats, some unsweetened vanilla almond milk, splenda, blueberries and cinnamon. I was having a hard time getting this down, might have been too early in the morning for oatmeal. I ended up dumping it in a paper bowl and taking it in the car to eat while Mr. Spice drove.
Mid-morning I broke out some almonds to get me through to lunch. (You can see my attempt at food journaling in the background!)
The last couple times I’ve had Chinese food, I’ve received fortunes that I’ve decided are strong hints about things to come. I taped them to my monitor to inspire me.
For lunch I packed some brown rice and baby spinach, then grabbed one of these Tasty Bite Channa Masala packs. I’ve bought these at Costco before, but when Tasty Bite contacted me a few months ago to send me samples I didn’t hesitate to say yes! I love this combo of brown rice, spinach, and spicy chickpeas. So comforting and so filling.
Ran some errands after lunch and then had an AdvantEdge Carb Control shake and the rest of my almonds for an afternoon snack.
I may have snuck a couple bite-size Milky Ways while waiting for Mr. Spice to finish up when I picked him up at work. Then I had some of these cajun sesame things once we got home. My parents brought us these and some other snacky stuff from this place called The Nifty Nut House in Wichita, KS.
After hinting to Mr. Spice that I like tulips A LOT, I decided to just go ahead and buy some for myself when I got groceries yesterday. They look so nice! (HINT HINT)
Aren’t these little slipper bootie things cute? I saw them at Bed Bath and Beyond yesterday and decided they’d be perfect to protect my feet from the cold floor. I think Chloe is fascinated by the little bobble things. I may have given her another reason to attack my feet.
For dinner I was planning on making some chicken, but we didn’t end up getting home until almost 8. Since Mr. Spice was going to have leftover pizza, I decided to make my own using some garlic naan I got at Publix this weekend. I don’t know why I never thought of using it as a base for pizza before, but then I was reading some blogs this weekend and saw naan pizzas and was inspired to try it out. I started with a little pesto, some shredded cheese, then baby spinach, mushrooms, dabs of ricotta, some salami, and some pizza sauce dribbled on top. Then I baked it at 400 degrees in my toaster oven for about 5 minutes. It took longer to put this together than to cook. This may become a regular weeknight dinner!
In anticipation of post-dinner snacking, I brought up some strawberries leftover from yesterday’s brunch and clementines. That’s the “being good” option. I’m sure I’ll find something else to add to this!
