I hope all my Spice’s Bites readers are keeping warm out there! I’m sure you’ve seen what a few inches of snow and ice has done to Atlanta — completely shut it down.
So much has happened in the past couple weeks! I am trying to catch up on all my posts.
But here’s what’s happened in the past week or so:
I got a huge promotion at work! The manager I work closely with decided to leave, so I am taking her place. I will really really miss her, we made a great team. It’s a big jump for me, but I’m very excited about it. I get an office now! 😀
Got my hair did this weekend. Figured I needed to look a bit more “managerial”:
Turned 31 on Monday. Still adjusting to that one!
Oh! I finally got a Snuggie! I tell you, these things are life-changing!
Anyway . . .
I actually got to work from home yesterday and today, since our office was closed due to the bad weather and roads. That was fine with me, I’ll never complain about not having to go into work on my birthday!
I was actually supposed to go to a doctor’s appointment before work this morning. I tried calling to see if they were open, but no answer, so I decided to go anyway. It was as I was leaving that I got the email about the office being closed, so I had gotten all dressed up for nothing. Well it turned out I couldn’t even get out of our neighborhood. There’s a bit of an upward slope going out of the neighborhood and one side of the road was blocked due to some jackass who left his huge-ass SUV stuck on the side of the street. When I turned the corner to head up the slope, I saw a fire and rescue truck and an ambulance on the other side. I probably could have squeezed by, but I couldn’t get any traction going up, so I just put my Zoom-Zoom into reverse and drove back home.
Since I was working from home today, I decided to take pics of my food. Haven’t done it in a while, so enjoy!
After my failed attempt to leave the house, a good breakfast was in order. I made eggs-in-a-hole for Mr. Spice and me!
To cut the circles, I used the cap from my olive oil cooking spray. Very resourceful in the morning I am!
After a couple tries, I got the hang of cooking these things! I just need to figure out how to get the yolk to cook a bit more without burning the bread. I don’t like super-runny yolks, but I’m weird like that. We had some Trader Joe’s peppered turkey bacon that needed to be eaten up, so we had that on the side, and I had some strawberries as well.
Lunch was whatever I would have taken to work with me if I’d gone into the office. I just got to enjoy it while working in my pajamas!
Publix was having a sale on Lean Cuisines and Smart Ones, they were 5 for $10. Usually I head straight for the Lean Cuisines, but I noticed that there was a coupon on a few of the Smart Ones where if you bought 10 you got $3 off. That means I could get 10 for $1.70 each — not a bad deal! I grabbed a few new-to-me flavors and this was one of them. I didn’t like it. The mac and cheese was fine and my steamed broccoli was fine, but the meat was yuck.
Luckily, snack time came a few hours later.
I tend to like protein and salty flavors in the afternoon. This hit the spot — a slice of Gouda cheese and some turkey cotto salami rolled up. Chloe enjoyed a tiny piece of Gouda that fell on the floor. She likes Gouda, Parmesan, sourdough bread, leather, and books. My high-falutin’ little kitty!
For dinner, we decided to grill up some Trader Joe’s carne asada sirloin. I love this stuff.
I had some of the carne asada sliced over salad and then made a quesadilla to go along with it from a Trader Joe’s habanero lime tortilla and some shredded cheese.
Later on, when the post-dinner munchies hit I had a glass of Silk PureAlmond Dark Chocolate. This stuff is so good! I’ve only been able to find it at Target.
And, just to be honest I had a few handfuls of dill pickle-flavored chips throughout the day. There, it’s out there.
