I had a couple of my girlfriends over for scary movie night last night. To get in the Halloween and fall spirit, I decided to make pumpkin chocolate-chip cookies for dessert. These are so unbelievably easy, there is no excuse not to try these!
So Easy Pumpkin Chocolate-Chip Cookies
1 box cake mix – I used spice cake flavored mix
1 can 100% pure pumpkin, not pumpkin pie filling
1 cup semi-sweet chocolate chips
Preheat oven to 350 degrees. Prepare cookie or baking sheet with parchment paper or foil sprayed with cooking spray.
Empty canned pumpkin into large bowl. Add cake mix, and mix thoroughly. Add chocolate chips and stir to combine.
Using a tablespoon or ice cream scoop, plop batter in tablespoon-sized amounts onto cookie sheet. I got 12 on my sheet.
Bake for 10-12 minutes. These cookies will remain soft even after cooking.
Repeat batches until batter is used up.
You can make cupcakes or mini-cupcakes instead of cookies if you want. Adjust cooking time to what it says on the box of cake mix.
I used spice cake mix, but you could use whatever flavor mix you want. I like using spice mix because all the pumpkin-pie spices are already in it. I’ve also used chocolate cake mix to make chocolate chocolate-chip cookies.
