Spice’s Bites — Jan. 11, 2010

I meant to post last night but I was just feeling crappy — headache, extra tired, etc.ย Since I’m supposed to be getting ready for work, I’ll make this quick.

I woke up yesterday really really wanting a green monster smoothie.ย  Guess I really needed some fruits and veggies to start me off.


As you can see, that’s not green! I put in some frozen peaches, frozen blueberries, some vanilla soymilk, and a big handful of spinach leaves and whizzed it up in a mini blender. Unlike the ones I’ve made in the past, I could definitely taste the spinach this time. I think my spinach ratio was off. And I was using regular spinach and not baby spinach, so who knows. But it was a good start to the day.

No way was that smoothie going to be breakfast. I packed the fixings for a breakfast sandwich with me and made one as soon as I got into work.

Today I used an Arnold’s Sandwich Thin for the bread. I like these, but I’ve heard there are equivalents from other brands that don’t have high-fructose corn syrup in them, so I might try those later. I forgot my Taco Bell hot sauce (we have a gazillion packets from the last time Mr. Spice and his friend had some plus I buy the bottles), but I did have some Mexican hot sauce at work and used that.

Since I didn’t cook this weekend and didn’t go grocery shopping, I didn’t have any leftovers or easy to pack lunch items. But remember my lunch stash at work? I packed a tangerine and some baby spinach to round it all out.


I heated the meal up most of the way, then dumped it onto the spinach I’d brought with me on a plate and finshed heating it up and then mixed it together.


I’m glad I packed the tangerine because I would have been still hungry after eating the Lean Cuisine. I have a serious case of portion distortion . . .


Of course I was starting to get hungry again after a few hours.

These are SO good. I’m so glad they come pre-portioned too.

Then around 3:45 we got an email saying that we were doing January birthdays in the conference room!

Turns out the birthday girls were one of the partners and me. We even have the same birthday!

I don’t know if it was the crash from the sugar high after eating the cake, but later in the afternoon I started getting this bad headache and feeling really sleepy. So I snuck out “early” at 6 and headed home.

You know that I struggle with getting dinner together in the evenings during the work week. If I’ve cooked on the weekend then we usually just have leftovers, or else we just heat up hodgepodge items for dinner if we haven’t decided to eat out. Well, yesterday I had actually managed to plan ahead and had found something easy I could do.

But first, I had some lowfat string cheese on the drive home. Sargento makes ones that are only 50 calories each, and I had packed two of them.

I managed to snap a quick pic of one while stopped at a light. ๐Ÿ™‚

So dinner was nothing fancy. Since Mr. Spice had really liked the crockpot barbecue chicken I made for New Year’s, I decided to bake up some boneless chicken thighs in barbecue sauce. I also nuked up some sweet potatoes on the side. I had planned on having a salad along with it, but decided at the last minute I didn’t want any.

Who knew that sweet potatoes taste good with barbecue sauce on them? Well, I’m sure some of you already knew, but this was a happy discovery for me. I think next time I’ll do the chicken in the crockpot, but it wasn’t too bad.

Now I’d like to say that was all, but it wasn’t. We had to go to Kroger to return some movies to the RedBox kiosk and monthly cravings steered me towards the chips aisle and I came home with some Doritos. Good thing I was too tired to do too much damage, but I did have quite a few. The Dorito carnage went undocumented, which is probably a good thing. ๐Ÿ™‚

Time to get ready for work!

I can be so tempted by the chips aisle. Movie and mindless munching goes hand in hand. I understand what you mean, but at least you stopped after a few bites!

Sweet potatoes taste good with almost anything on them!

Frozen meals are never enough for me. I usually have to consume them with two side items!

Priyanka — that’s the thing, I didn’t stop after a few bites. More like a few big handfuls!

Lily — I’m really liking how versatile sweet potatoes are, they’re so yummy and good for you!

Ameena — Thanks for the b-day wishes! I would totally give you a Bengali cooking lesson!
