First of all, I’d like to wish a Happy Father’s Day to all the dads and dads-to-be out there!
This morning Mr. Spice and I had a discussion about wanting to be healthier. Well mostly about me getting healthier and how he fits into that. I told him that it would be easier on me if he went along with it too — and that means he has to start eating more fruits and veggies! So we’ll see how that goes!
It was after 11 by the time we got around to eating, so this was more a brunch than a breakast.
I made egg-white omelets filled with baby spinach and turkey kielbasa. I had some blueberries and ciabatta on the side. and some hot sauce sprinkled over the omelet and bread! Mr. Spice had a blueberry muffin and some V8 Fusion with his omelet. Hey, baby steps for him.
I ran some errands after that and finally found some tops for myself. Now I can quit repeating the same shirts every week at work! I grabbed a Cliff Z Bar between errands when I got hungry. No pics since I was driving at the time.
After I got home we lazed around the whole afternoon. I got hungry around 3:30 and heated up a couple slices of leftover frozen pizza from last night.
Okay fine, there might have been a little chips and chocolate after that. I’m still working on the eating when hungry thing.
For dinner I cooked up boneless skinless chicken thighs, broccoli, and cauliflower using a packaged spice paste I got from the Indian grocery store a couple weeks ago. Served with basmati rice and spicy mango pickle.
I bought a couple mangoes yesterday and decided we had better not wait too long to eat them. I suck at cutting mangoes, in case you can’t tell. One of them was soft and it was hard to get the pieces off.
The best part was the mango pits. This is really all I had of the mango — it’s such fun to get all drippy and messy with mango all over your face and arms.
