Daily Bites – 1/22/14

So right after I promise my wellness coach that I’d post my eats every day this week, what do I do?  Not post yesterday’s eats.  Sorry Ruthie! 🙂

I had intended to have some of that vat of oatmeal I’d made this weekend for breakfast, but as usual we were running late and it was all I could do to grab one of these and chug it during our commute.  Thank god for these.

When I got into work, I found out that the power was off and that I’d apparently missed the explosion everyone had heard about 20 minutes earlier due to a blown transformer or something.  Luckily, I’d also missed the horrible traffic due to the fire engines and messed up traffic lights since I’d come in the other way.  Unluckily our computers were still up because of our backup generator.  Darn!

The power came back on about 10 minutes later and I got slammed with stuff to work on — looks like tax season is already rearing its ugly head. Ugh.  I spent all morning working on a tax research project and realized around 11:30 that I hadn’t eaten anything since about 7:30.  Almonds to the rescue!

Lunch today was leftovers from yesterday’s lunch.  I had ordered 2 black bean sliders because I thought they were going to be slider-sized.  Totally normal assumption.  However, the sliders turned out to be normal burger sized, so needless to say I wasn’t going to eat both.  So today I got to have the other slider, the rest of my sweet potato fries, and some steamed broccoli.

I had a clementine around 3:30 and probably should have had something else to go with it had I known I wasn’t going to eat again until after 7.

As soon as we got home I made up a little snack plate to tide me over until I made dinner. Rosemary saltines, feta, and olives.

I’ve been wanting to try this Korean ground beef recipe I’ve seen everywhere and finally got around to it tonight. All the recipes look the same to me, but I used the one from Damn Delicious and of course tweaked it a bit. I was a bit hesitant at first since the recipe calls for 1/3 cup brown sugar and I’m not a fan of sweet meat, but it turned out fine! Mr. Spice even liked it! I’m sure I’ll end up posting my version with my tweaks one of these days.  I had it over brown rice and more steamed broccoli.

For my post-dinner munchies, I dug out a packet of these Nutrisystem chocolate covered pretzels.  Sooo good.  Too bad there’s only like 6 pretzels in the whole bag.
