Daily Bites – 1/25/14

Ahhh, Saturday. How has yours been?

Mine hasn’t been too bad — went to my Weight Watchers meeting (they must hate me, I’ve been playing with the same 2.5 lb since the end of September), did some groceries, relaxed and puttered around in the kitchen.

I had a clementine right after weighing in, then after doing groceries I was more than ready for breakfast! Made a smoothie for Mr. Spice and me with kale, clementines, fresh strawberries and blackberries.

I had the smoothie along with steel cut oats mixed with pumpkin, pumpkin pie spice, splenda, and some chocolate chips. Oh and a side of turkey bacon. I gotta admit, I’m not really loving the steel cut oats, I think it’s the texture, and that may be an oatmeal thing in general. But it’s good for you, so I’ll have to figure out a way to trick myself into eating. Adding chocolate seems to help!

Poor Mr. Spice had to work today, so he left a little after noon and I’ve had the house to myself so far. For lunch I had some of the leftover Korean-style ground beef I made a couple nights ago, along with brown rice and broccoli. I made the brown rice in the slow cooker, but I don’t like the way it turned out, it kept reminding me of the oatmeal. Blech.

I alternated between reading, playing on Facebook/Pinterest and cooking all afternoon.

I had some chicken thighs that really needed to be used up, so I marinated them using this recipe for red miso-baked salmon, adding some garlic and ginger to the marinade.

Then I decided to try out these orange ricotta muffins with chocolate chips that I found on Pinterest. Looks like you sub the ricotta for the oil/butter in the muffin recipe. I liked it! The muffins came out tender and fluffy. I used unsweetened vanilla almond milk, egg beaters, and part-skim ricotta, plus the recipe uses white whole wheat flour, so these seem to be healthier than the typical muffin recipe. Of course when you have more than one it’s not so good for you, but I had to do quality control testing!

Dinner was some of the red miso chicken thighs with brown rice and broccoli. Can you tell I’m trying to eat up the brown rice? I was originally going to try out a pasta dish, then thought I’d make a naan pizza, but in the end it was just easier to heat all this up.

Now just so you don’t think I did that good on my eating, here’s what I’ve been snacking on here and there while reading and watching tv. A little junk food for my junk TV — I’m watching that Lizzie Borden movie on Lifetime. Don’t judge!
