Oh yes, I think I found my new weeknight go-to dinner. This takes no time at all to put together!
The key to all the flavor is to use ginger and garlic pastes. I buy mine at Indian grocery stores and just store in the fridge when I’m not using them. The other important ingredient is crushed black pepper, don’t be lazy and use regular black pepper!
These thighs have a distinctly Asian flavor due to the ginger, with a slant towards the Indian end of the spectrum. At least, that’s my opinion! Pair with fresh steamed veggies for a quick and light dinner, or use them to make flavorful sandwiches.
Ginger and Black Pepper Chicken Thighs
Ingredients
1 lb. boneless, skinless chicken thighs
1 tbsp. ginger paste
1/2 tbps. garlic paste
1 tbsp. crushed black pepper
1 tsp. lemon juice
salt to taste
Preparation
1. Preheat oven to 350 degrees Fahrenheit. Line a glass baking dish with foil and spray with cooking spray.
2. Place chicken thighs in a mixing bowl and combine with rest of ingredients. Let sit while oven preheats.
3. Transfer chicken thighs to baking dish and bake for 20-25 minutes, or until chicken is cooked through.
