I’m loving these lazy Sundays!
Even though we’re trying to eat what we already have at home, I really did need to pick up some stuff at the store today. I did pretty well about not going crazy and not stockpiling like I usually do. A few treats did find their way into the cart. Publix has good BOGO sales and they had different varieties of Keebler Chips Deluxe cookies on sale. I got Oatmeal Chocolate Chip and Chocolate Malt Chunk — I’ve been in a cookie mood. And then the Publix brand of ice creams were on sale 2 for $5 (their ice cream is great!) — I got one called Raspberry Roadrunner that seems to be raspberry and dark chocolate ribbons in white-chocolate low-fat frozen yogurt. Yum! Those and some Baked Lays for Mr. Spice and light butter popcorn were the only junk I got.
I wasn’t in a cooking mood so I got a rotisserie chicken for dinner tonight. I usually get their Mojo-flavored chickens, but they didn’t have any ready and I didn’t want to wait an hour, so I got the Mediterranean flavored kind. When we get rotisserie chicken I usually end up making some couscous to go along with it, not sure why.
And of course there were chicken leftovers, so guess what I’m packing for lunch on Monday?
Yes, I took some of the skin with the chicken, it’s the best part! I packed some extra spinach to go with the couscous and chicken because I’d eaten most of the spinach I’d made tonight. Then I packed some carrot slices and some pomegranate arils. And yes, I color-coordinate my fruits and veggies with my bento boxes. I like the visual appeal — it makes it seem less “diet-y” if it looks all cute. Not that I’ve been eating diet-y if I were really honest about documenting what I’ve been eating the past few weeks . . . but that needs to change! 🙂
