Panini for me

Not a bad job today.  Didn’t get my workout in, since I had to pick up something at this FedEx center way out in the boonies, but still a good day.

Today I had to go back to using the regular Morningstar Farms breakfast sausage patties. I have to say, I like the hot and spicy version better. Is anyone really surprised by that? Guess I’ll have to go back to adding hot sauce to these babies.

For lunch, I cooked up some couscous and spinach in the microwave at work and then added some leftover chicken towards the end to heat it through.

Some berries on the side. I was still hungry after this and had a Vita Top that I had in the freezer at work.

I was feeling munchy all afternoon, but I gave myself a little test to see if I was really hungry. If I was truly hungry, then the apple I had on my desk was going to look mighty yummy. Turns out I really wasn’t that hungry until 5. Then it looked really good! I sliced it and had it with some natural peanut butter, sprinkling all of it with splenda and cinnamon.

I was on my own for dinner and wanted to make it quick but somewhat healthy. I made a faux panini on the George Foreman grill with turkey, Gouda, baby spinach, tomatoes, and Dijon mustard on rye. I had some Tater Tots on the side for kicks.

I couldn’t resist taking this pic of Chloe — she finds the funniest places to hang out.  Lately she’s been hiding behind the blinds on the window sill in our family room.  Last night she was half on the sill and half on the couch, with only the blinds holding her in place.  Silly kitty!
