When I got home today, Ma wanted help making Shingaras for the party she’s having tonight. Once all the filling was gone, we realized she still had a tone of dough left. So she wanted to come up with something else to make. She took a can of black beans, and mashed them with potatoes and a lot of the same spices you used…and made it extra spicy. She then put then in the dough as a filling. Instead of the traditional shingaras, they were more flat…kinda like a stuffed porota, but triangular shaped. Anyway, they turned out great but the best part was the filling it self. I thought of you when we did it because I knew you were making your black bean chops.
