Happy Monday!<\/p>\n
Hope you had a good weekend, mine was pretty good and productive. \u00a0Finally got some repairs done on my car, then got it washed and cleaned inside. \u00a0Went to a dinner party with some friends Saturday night. \u00a0Sunday I relaxed and made steel-cut oats and brown rice in the slow-cooker to see if that would help with meal planning.<\/p>\n
Mr. Spice admitted that he actually likes to eat breakfast but never gets time so we’re going to try to make an effort to eat together before work.<\/p>\n
Breakfast: Steel-cut oats, some unsweetened vanilla almond milk, splenda, blueberries and cinnamon. \u00a0I was having a hard time getting this down, might have been too early in the morning for oatmeal. \u00a0I ended up dumping it in a paper bowl and taking it in the car to eat while Mr. Spice drove.<\/p>\n
Mid-morning I broke out some almonds to get me through to lunch. (You can see my attempt at food journaling in the background!)<\/p>\n The last couple times I’ve had Chinese food, I’ve received fortunes that I’ve decided are strong hints about things to come. I taped them to my monitor to inspire me.<\/p>\n For lunch I packed some brown rice and baby spinach, then grabbed one of these Tasty Bite Channa Masala packs. \u00a0I’ve bought these at Costco before, but when Tasty Bite<\/a> contacted me a few months ago to send me samples I didn’t hesitate to say yes! \u00a0I love this combo of brown rice, spinach, and spicy chickpeas. \u00a0So comforting and so filling.<\/p>\n Ran some errands after lunch and then had an AdvantEdge Carb Control shake and the rest of my almonds for an afternoon snack.<\/p>\n I may have snuck a couple bite-size Milky Ways while waiting for Mr. Spice to finish up when I picked him up at work. Then I had some of these cajun sesame things once we got home. My parents brought us these and some other snacky stuff from this place called The Nifty Nut House in Wichita, KS.<\/p>\n After hinting to Mr. Spice that I like tulips A LOT, I decided to just go ahead and buy some for myself when I got groceries yesterday. They look so nice! (HINT HINT)<\/p>\n Aren’t these little slipper bootie things cute? I saw them at Bed Bath and Beyond yesterday and decided they’d be perfect to protect my feet from the cold floor. I think Chloe is fascinated by the little bobble things. I may have given her another reason to attack my feet.<\/p>\n For dinner I was planning on making some chicken, but we didn’t end up getting home until almost 8. \u00a0Since Mr. Spice was going to have leftover pizza, I decided to make my own using some garlic naan I got at Publix this weekend. \u00a0I don’t know why I never thought of using it as a base for pizza before, but then I was reading some blogs this weekend and saw naan pizzas and was inspired to try it out. \u00a0I started with a little pesto, some shredded cheese, then baby spinach, mushrooms, dabs of ricotta, some salami, and some pizza sauce dribbled on top. Then I baked it at 400 degrees in my toaster oven for about 5 minutes. \u00a0It took longer to put this together than to cook. \u00a0This may become a regular weeknight dinner!<\/p>\n<\/a><\/p>\n
